What's on the Menu?: Super Bowl Edition

As a result of the awesome recipes and feedback we collected for previous installments (FanIQ Holiday Recipe Book and FanIQ Super Bowl Recipe Book), with as old as those are and as many new users as we have, I've decided that it would be a good time to put another one together for the Super Bowl and show previous recipes to people who haven't seen them yet!

Most of us either host or attend parties for the big day, which usually necessitates making and/or bringing food. I figured we could post our favorite SB party recipes here! I'll add them to the current Super Bowl Recipe blog and link it so you can print it out or bookmark it or pin it, or whatever!

Usually we either do a great big sandwich from Subway or pizza or something, but my husband suggested a hoagie station with plates or deli style containers of all sorts of different deli meats, vegetables, and sauces, and I thought it was a fantastic idea. I think I'm also going to make a crock pot full of my meatballs in marinara so we can do meatball subs if we want, too. Of course we have to have Li'l Smokies in bbq sauce, and pigs in a blanket as usual. I'm going to make either cupcakes or cookies too (cookies will be either jerseys or helmets or something football related). I'll post the recipes for my meatballs in marinara and cookies when I have more time. 1. I always have the party at my house and make lots of food 2. All of it 3. In years past I've brought queso dip, wings, etc. This year, however, I'm going to attempt making Nick's spinach and artichoke dip. I figure if must be easy if he can make it. 1. Spinach and Artichoke Dip Buy; > cooking spray ( I use Olive Oil or Canola Oil spray) > 1 frozen box of spinach - let thaw before using > 2 large cans (14 oz) of Artichoke hearts - I usually get the halves > 1 garlic clove (you need a garlic press, otherwise, buy the minced garlic in a jar) - I tend to use the biggest clove I can find in the bulb but that's because I garlic! > Parmasan cheese - see if you can find the grated kind that comes in the plastic tub. Otherwise, you can get a block and grate it yourself > 8oz Sour Cream > Mayonnaise > Salt and Pepper It'll take you about 5 mins to prep and 30 minutes to bake So, what I do is pre-heat stove to 375, drain the thawed spinach and place in a large bowl. Add the garlic, either garlic press the clove or if you are using minced garlic, add a teaspoon or as much as you desire. Drain the juice from the Artichoke hearts and then add to bowl 1 cup of Parmesan cheese 3/4 cup of sour cream 3/4 cup mayonnaise Add salt and pepper (your desire) Mix In a casserole dish ( I use the 11X9 size), spray with Cooking spray Then add your mixture Bake at 375 for 30 minutes 1. #6 \| 505 days ago BRye21 (+)	I don't really have a recipe but one thing I like to bring for people just to munch on are these little mini sandwiches. I use the 12 pack of mini hawaiian rolls and cut them all in half then i get either turkey or ham, or both and i fold two of them into triangles(2 pieces per sandwich, then i take a piece of colby jack cheese and tear it in half and fold the two halves into quarters(one half per sandwich). PS - If you want a SALSA VERDE kind, replace the Whole Peeled Tomatoes with Tomatillos. Enjoy! My 6 TIME award winning Homemade salsa - Needed: Hot Spice level - Cilantro Large Can of Whole Peeled Tomatoes (drain the juice) 1 Lime I clove of garlic 2 Serrano Peppers 1 Jalapeno Pepper 1/2 of a Red Onion Medium Spice Level - Cilantro Large Can of Whole Peeled Tomatoes (drain the juice) 1 Lime I clove of garlic 1 Serrano Pepper 1/2 of a Red Onion Mild – Cilantro Large Can of Whole Peeled Tomatoes (drain the juice) 1 Lime I clove of garlic 1/2 of a Red Onion In a blender, dump can of tomotoes Then add a hand full of cilantro leaves Then add your peppers if you are making the Spicy or Medium levels Then, chop up the 1/2 of onion and add Then garlic press the garlic clove into the blender then squeeze the juice from 1/2 of a lime.....if the lime isn't that juicy, you can squeeze the juice from both halves. I usually blend on the Sauce option and I'll blend for 10 seconds then stop, then for another 10 seconds, then stop...repeat another 2-3 times and serve. If or when you refrigerate the salsa, make sure you let it air out for a good 15 minutes and stir. The juices from the lime and tomatoes tend to raise to the top if the salsa stands for too long, so, you'll want to stir it up. I actually cook and bake quite a lot. I make a home meal almost every night of the week. I may order out or buy a pre-made meal 1x a week on average. And I love to bake (wink-wink). Last year I went with spinach-artichoke dip, made my own tortilla chips, a taco bar, and something else...the thing that ended up being eaten most? My friend brought over Velveeta and store-bought salsa. This year I'm probably just doing this: 1. Sometimes I have my own, sometimes I go elsewhere, but I always bring... 2. All of it 3. #11 \| 505 days ago Jess (+)	(Edited by Jess) Oh yea! Like Nick, I'll be making my homemade salsa too. Mine is more pico de gallo style though (unless you choose to blend it). Here's the recipe for mine, if you want a couple to choose from. I do use a food processor to chop the ingredients other than the tomatoes (I just dice those), but they're all fresh, unless you choose to use a can of tomato sauce to make it a little juicier: One batch - you may want to make 2 if it's a party (I always do) 10 Roma tomatoes (diced) 1/2 white or yellow onion (chopped) 3-4 Anaheim peppers - de-seed all but 1/2 of one pepper (total) for mild, adjust as desired (chopped) 5 garlic cloves (minced) 1 finger fresh oregano (minced) 2 fingers fresh cilantro (minced) Juice of 1 lime (squeeze that sucker good) 1 - 1.5 tsp salt - then add .5 tsp at a time to taste Black pepper to taste - I also sometimes put a dash of cayenne in it, but it isn't necessary. a finger = a bundle about the width of your finger across Mix it all together in a bowl - serve with tortilla chips, quesadillas, tacos, burritos, eggs, and everything else. Its a pretty big hit - every time I'd have a party or bring it to one, I had to write out the recipe at least once. I just started bringing recipe cards with it. 1. I grew up with numerous Mexican friends who's moms and grandmas shared recipes with me. Or even that I know how to look up recipes on line from fine Mexican chefs. I love authentic Mexican food - the town in which we used to live had a fantastic place run by people who were actually from Mexico. They knew us well enough there that they always brought us extra salsa (because we always asked...so they just started bringing it to us automatically), and they always asked me if I was going to go with "the #3 or #7 today?" because that's all I ever ordered. But, sometimes we don't have time to sit down and have a meal at a restaurant and we don't think to call for takeout. Plus we road trip a lot...chains we enjoy are good for that and I prefer Chipotle over any other fast food place (even Subway). 1. I always have the party at my house and make lots of food 2. Alligator wings - its basically the upper front legs of the gator which once cleaned kinda looks like a chicken wing. we marinade em in cajun seasonings over night , then we bbq them with a honey/vinegar bbq sauce my uncle makes (great spicy/sweet mix) , works so well with the light alligator flavor. Great Cajun appetizer ! Hot and Cheesy Crab Dip - Its so easy and quick to make but its fabulous and always a hit. Put in on a serving plate with some crackers and thin slices of avocado. basically its velveeta cheese , fresh crab meat (half lump / half flaked) , sour cream , colorful peppers along with cayenne pepper and other Cajun seasonings. Plus we always get a Veggie and Cheese plate from a local catering spot. Then we will be making Alligator Sauce Picante - For this we get the Alligator tail and cut it into bite size pieces and then use it in the Sauce Picante which is just a Cajun way of saying its cooked in a thick and flavorful kinda spicy gravy and served over rice. Its cooked outside using a burner and a large black cast iron pot which adds a lot to the flavor and depth of the gravy. On side some fried Oysters and Alligator chunks ! We get the gator and oysters fresh so makes it a great way to go ! 1. I always have the party at my house and make lots of food 2. All of it 3. I have my own party, I answered above 4. Main dish

I can see how it's quick and convenient, especially with a family to feed. A Qdoba opened up in the town I attended school in during my sophomore year (IIRC). The mob scene when it opened was rivaled only by In-n-Out (from what I've heard anyways). People were seriously going crazy and acting like it was the greatest thing since sliced bread. Therefore, I had to see what all the fuss was about, but I refused to try it until business died down. When I finally did, I thought it was OK, but nothing to write home about. Sorta like "The Hangover," I bought into the hype and my expectations were just too high. Don't you just love the service at mom & pop places though? Not only is the food fantastic, it's the service with a smile that sets them apart. I love going into a place and getting treated like family. 1. I usually attend a potluck 2. And it actually has a light flavor in the tail meat and its not gamey at all like say turtle meat, but its so much more delicate then chicken and different in texture when its cooked right and the two aren't really close. I don't even know the name of either restaurant, nor would I DARE enter them just by looking at the outside. A friend drug me in to each of them, kicking and screaming, and I was almost sure (judging from the outside of each place) that I might leave with some little critters shacking up in my intestines. They are now regular stops for me...and the food is great.

So this year I'm making ----- Triple Chocolate balls---------------I'm going to try to shape them into footballs (yeah right)---To make: one package of chocolate instant pudding mix, package of oreo cookies, 2/3 cup of milk, dark chocolate morsels (a bag) Directions: mix pudding with 2/3 cold milk, stir in crushed oreo cookies (great for anger management), form balls-----when all balls are formed, put balls into the freezer for about 15 minutes. Melt morsels----then dip balls and sit on wax paper. And since I always have melted chocolate left, I'm going to dip orange wedges with the rest (cuties work best). Strawberry Cake cookies----box of cake mix (I'm using strawberry, but any would do), mix with 2 eggs, and 1/3 cup oil. Drop one inch drops onto cookie sheet. Bake for about 7 minutes......sometimes 10. 1. I usually attend a potluck 2. I go to someone else's 3. An appetizer 4. Sweet treats

#38 \| 505 days ago Jess (+)	I called my mom today and while she had me on the phone, she asked for my recipe for the meatball subs I make (we had them when she was here), so I gave her the recipe and we started talking about what we're making for our Super Bowl parties. She's having one too, naturally. She wanted to make something that she could shape into little footballs, so I suggested those chocolate rice krispies treat footballs and Kiernan said "those are a pain in the butt!" So we laughed, and decided that...hey...why not shape the meatballs into footballs?! I'm gonna have to do that too. Yes, my mom and I are both crazy. 1. #40 \| 505 days ago icfeet (+)	Chicken wings (Kat...TRY EM...you MIGHT like em) Frozen wings...place on cookie sheet and pour SOY SAUCE over them...add a little water to the pan. Cook at 400-450 for 30-35 minutes. Turn wings over, apply more soy sauce and more water to the sheet, cook another 30-35 minutes. GREAT flavor, though a little salty (a little beer can fix that). Maybe you know this, but just in case I'll tell you that It's called discada because it's cooked on a plow disc that has been modifified for this purpose

Then we will be making Alligator Sauce Picante - For this we get the Alligator tail and cut it into bite size pieces and then use it in the Sauce Picante which is just a Cajun way of saying its cooked in a thick and flavorful kinda spicy gravy and served over rice. Its cooked outside using a burner and a large black cast iron pot which adds a lot to the flavor and depth of the gravy. On side some fried Oysters and Alligator chunks ! We get the gator and oysters fresh so makes it a great way to go ! Sooo the veggie and cheese plate would be just for me. There would also need to be a LOT of vodka. 1. But, sometimes we don't have time to sit down and have a meal at a restaurant and we don't think to call for takeout. Plus we road trip a lot...chains we enjoy are good for that and I prefer Chipotle over any other fast food place (even Subway). you are doing well. keep it up!
