What should I make?
I haven't made a recipe poll in forever, and it's time. I know we have food polls all the time, but I want recipes, and although I find a ton on Pinterest on a regular basis, you can never have too many. With football season underway now, Thanksgiving, and that other holiday of which we do not name before December 1 around here coming up, I figure now is as good a time as any.

So give us what you've got - party food, entrees, side dishes, desserts...something you'd like to share. I'll share some of mine too!

I made this the other night - what it looked like before it went into the oven:



Not really a recipe to follow - most of the time I just wing it.  I sprinkled about 8 or 9 chicken breast tenderloins with a little bit of black pepper and parmesan cheese and then wrapped them each in a piece of lean ham. Then I rubbed them all with minced garlic in oil, topped with some more parmesan, and sliced up some red and yellow bell pepper, baby roma tomatoes, and yellow onion. Put the foil on them, baked at 375 for about 30 minutes, pulled the foil off and topped with MORE parmesan, put back in the oven with no foil on top for about five minutes until the parm was bubbly. I served over penne pasta tossed with garlic butter, but it would have gone well on its own with just a side of garlic bread or something.

I really got nothing. Except I made your salsa this weekend, Delish , and as far as the banana muffins, I didn't even get the struesel topping on before they were gone.  So thank you!  I was going to take pics to share, next time .

Cherry Cheese Croissant

  • 1 cherry pie filling (any fruit filling)
  • 1 – 8 oz. cream cheese
  • 2 tbl sugar
  • 2 pkg Pillsbury crescent rolls
 
In hospitality Set, place crescent rolls triangles on the edge and spread cheese & sugar on the bottom, then the filling & fold over.  Bake at 375 degrees for 25-30 min.

oh yeah - I made turkey wings in the middle of the week since I was off for a few days,,i used a roasted garlic w/mushroom cream soup and red onions instead of spanish onions and they came out slamming - - slow baked at 375 for approx 3 hrs and now I wished I woiuldve made more than just 5,now I have nothing to eat for dinner unless I order out or cook again. Open to any new chicken menu's if anybody got one!

Last week i tried the CrockPot pork roast recipe from Pinterest. It takes 8 hours to cook so need to plan in advance but it was excellent , meat is so tender comes apart at the fingertips. Plus its so easy to make.


Pork Roast (2-5 lbs) depending on how many ya feeding
1 packet brown gravy mix (McCormicks)
1 packet ranch dressing mix
1 packets italian dressing mix ( we substituted cajun seasoning instead of this, figured may be a tad on salty side with this on top of the ranch but was great w/ Cajun seasoning)
Stick Butter (non salted)

combine all packets with 1/2 cup water ....... place ya pork roast in crockpot and pour liquid over it. Place a half stick of butter on top of pork roast and set it on low for 8 hours. 

It makes its own gravy and all.

What do you do with the other half-stick (1/4 c or 4 Tbsp) of butter? Spread it on the bread you serve with the roast? laugh

I've listed a ton of what I make in the past, so, here is my homemade Spaghetti Sauce (don't think I've ever listed that one?)

Spaghetti Sauce

Olive Oil
1 Red Onion (peeled and chopped)
3 Garlic Cloves (because I love my garlic, but, you can use 2 cloves if you don't  - chopped)
1.25 or more of Ground Beef (if you are just making for 1, I use close to 1 lb, if you are making for 4+, I would use at least 1.75lb)
1 Large can of Hunts Tomato Sauce
1 can of Hunts Diced Tomatoes (I usually get the Garlic & Onion flavored diced tomato)
Ground Pepper
Salt
Oregano (Optional)


MED-HIGH Heat
In a large pot, pour some Olive Oil to cover the bottom of the pot
Pour in chopped onion and stir
Pour in chopped garlic cloves
Sautee until onions are soft
Dump in ground beef, mix all three and stir occasionally until meat is browned

Reduced heat to Medium

Pour in 1 large can of Tomato Sauce (if you like it more of the Bolanaise style, pour in 1/3 to 1/2 a can)
Pour in 1 can of Diced Tomatoes and stir

Add seasoning (Pepper, Salt, Oregano, whatever you like for spices)

Heat until a slow boil, stir, reduce heat to LOW-MED and partially cover with a lid until you're ready to serve

I just had to show someone over the age of 50 how to make egg salad.  No clue, at all.
I was all like "You've eaten it right?"

I'm over it for today.

I'm cheating.  I bought some organic spinach and ricotta ravioli.
I'm gonna put some Applegate italian sausage  in with it and some
sauce I made yesterday.  Similar to Nicks, except I stir in a little marscapone or cream to finish it.  and I cook
the sauce with a whole carrot in it, which I remove at the end....

I like these polls Jess.  I need some fresh ideas.
My new client is going vegan.

Every year for Thanksgiving before my divorce, I used to do all the cooking. I used to do the turkey, cranberry sauce, greenbean casserole, corn bread, stuffing, mashed potatoes, corn on the cob, peas and carrots, and candied yams, plus I'd make lasagna the way my grandmother taught me when I was 4. Marinara sauce was all hand-made and fresh (sugar, crushed, diced, and pasted tomatoes {not the canned crap}, fresh diced garlic, freshly fine-diced onions and peppers, fresh chopped oregano, basil, thyme, and a few secret ingredients). I made the meatballs by hand (flower, eggs, bread crumbs, hot sauce, worchestshire sauce, teriyaki sauce, and pineapple juice), used low-fat and low-sodium ricotta cheese and mozzerella cheese that I had to hand shred. Would cook the sausage in one frying pan, the meatballs to halfway done in another frying pan while the sauce simmered on the stove as I boiled the lasagna noodles and added the sausage and meatballs to the sauce, oil and all to let them cook more. would take out 6 sausages, 6 meatballs, chop them all the way down until they were fine, then add to another pot on the stove with ricotta cheese and the sauce. When noodles were done, put sauce in pan, then noodles, then ricotta/sauce/meat mix, then noodles, then ricotta, then noodles, then ricotta/sauce/meat mix, then noodles then cover with sauce from pot on stove, load with meatballs and sausage, cover top with shredded mozzerella, back for 25 minutes.

I started out with one pan of lasagna that would be gone before the turkey was; Thanksgiving before I was divorced, I was baking 3 large pans of lasagna  (think 6" deep baking pans used in restaurants) and STILL wouldn't have enough left over for the Saturday meal.

I miss cooking.

Here's a few recipes for snacks, etc  I make for during ball games :)

Cheesy Mushroom Bread
1 loaf French Bread sliced in half lengthwise
Butter
Fresh mushrooms
Shredded Mozarella cheese
Chopped onions
On bottom layer, sprinkle Mozarella cheese heavily.
Saute mushrooms and onions in butter. Put this on top of cheese.
Top with remaining cheese.
Put top of bread on; wrap in foil. Place in 350 degree oven until hot


Tortilla Rolls
1 8oz. cream cheese
1 cup shredded cheddar
2 Tbsp. Sugar
1 8oz. sour cream
2 cups shredded ham
1 bunch onions - top only
8 -10 Flour Tortillas
Mix all ingredients (except flour tortillas) well. Spread over Tortillas.
Roll up and chill 3 - 4 hrs.  Slice into bite size pieces.

Here's one that I make at least once every 2 weeks. Was just trying something different and it turned out delicious! :) The recipe makes a medium size pot full. You can add more of the ingredients or less...whichever you need.  Also good reheated.

8-10 medium size potatoes, peeled and cut in pieces.
1 family size can 98% fat free Cream of Mushroom Soup (or regular C.O.M. soup)
1 medium onion, chopped
1 1/2 lbs. velveeta cheese (regular or 2%)

Boil potatoes with salt, pepper, butter and chopped onion until potatoes are done.
Drain water off leaving just enough to cover potatoes in pot.
With potato masher, mash potatoes in little pieces.
Add can of Cream of Mushroom Soup and stir well.
Add velveeta cut in pieces.
Cook on medium/low heat until cheese is melted, stirring often.
Serve with buttered french bread (garlic optional)

Easy chicken for a night you're running late.

boneless skinless chicken breasts

marinate in italian dressing for about 10 minutes.

roll in instant mashed potato flakes

fry in very little oil on med for about 8 minutes each side. 

Trust me, even the kids will ask for it again. smiley

I made some baby food last night, pealed and steamed some pink lady apples, blended it up and added an avocado then blended it again.  That sh-t was good....although I have no idea what I can do with it besides give it to my kid.
