Gobble It Up
It's that time again! Thanksgiving is on its way...I still have no set plans. I don't know if I'll be cooking an entire dinner, going to someone's house and bringing a side, or going to the galley at the station and letting someone else do all the work. (Well, they already do the work, but we haven't decided whether or not we want to add 3 more to their list to feed.) 

I digress...

As traditional as Thanksgiving dinner is, people sometimes do things differently. The dishes may be the same, but everyone has their own recipe.

 It will be a smaller Thanksgiving this year. @ eldest daughters won't be home for Turkery day.
 I have a wonderful hubby who cooks the whole meal! We stay home, watch the pArade, chill out, and pig out!

 I'm doing the same thing I do every Thanksgiving...sleep in, watch football, eat some snacks, watch more football, eat dinner, watch more football while I eat pumpkin log for dessert.

 1. My mom's first then somewhere I can freely drink alcohol.
2. I do cook an entire meal because I don't dig most people's food, but I don't eat it til days later. I shan't share with you all. It's basic, I'm simple.
3. I take Ryan to my mom's, and I take liquor and whatever dish they request to my friends'.

 Not sure yet..I am honestly thinking about going out. Thanksgiving is my favorite holiday and it brings many bittersweet memories, I already feel my eyes tearing...going out eliminates all the work and no leftovers. The boys are not really turkey kids.....I'm up to my eyeballs in stuff, i'm getting tired just thinking about it. I will bake some pies...I love me some pie!

 1 - We usually invite any and all coasties around that don't have anywhere to go. Sometimes we combine efforts with another family or two but usually it's at my house.
2 - I will be back with these. I usually prefer my food over others too, and I don't do turkey unless we have a houseful (I don't eat poultry leftovers).
3 - Always - I'll share more recipes soon.

 1.  We usually spend it at Robs brothers house.  Once I made it for just us, because everyone was somewhere else.  It was kind of nice without the cheap wine and drunken rude comments.

2.  To keep your turkey from drying out, soak cheesecloth in white wine and melted butter and cover the bird during the last hour or so.   Mmmm

3.  Alcohol and whatever they ask me to bring.

4.  Going to Georgia to spend with our friends in the mountains.  My kids are with their dad this year.  No turkey, roasting pork I think.  Bonfires, booze and a lot of driving.

 1) our house
2)  roast a FRESH turkey.   it is far and away better than a frozen bird. costs a bit more but sooo worth it.
3)  if we go i will bring whatever is asked for
4)  there will probably be just the 2 of us this year.  Sarah won't be home till Christmas and Alex & Terri alternate each year between the parents.  may have to grill a couple steaks instead of roasting turkey.

 1.  We go to my snobby-ass sister and bro in law's for Thanksgiving, where no one gets to watch football unless HIS sons are there, which is not likely this year so I'll be leaving early.

3.  I take my mac and cheese.  This is not MY recipe.  It's pretty damn close, though.

Ingredients

  • 1/2 pound elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon powdered mustard
  • 3 cups milk
  • 1/2 cup yellow onion, finely diced
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1 large egg
  • 12 ounces sharp cheddar, shredded
  • 1 teaspoon kosher salt
  • Fresh black pepper

Topping:

  • 3 tablespoons butter
  • 1 cup panko bread crumbs

Directions

Preheat oven to 350 degrees F.

In a large pot of boiling, salted water cook the pasta to al dente.

While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.

Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.

Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

4.  Resisting the temptation to punch my sister and bro-in-law in the throat.  Or, wtf, I may go for it anyway.

 1. My wife, kids and I have been going to my Dad's house since my mom passed away 11 years ago. It makes him happy, especially now that he has a Great-Grandson!

2. No tricks, just simple easy cooking.

3. I usually will take a ham, cornbread and beer!

4. This is going to be a tough one..we are going to my Dad's for brunch, he's ill and not doing well but he's a tough man, and then we are traveling up north past Fresno for my wife's side of the family! She has a cousin that has terminal cancer and the doctor's have given him two months, so we want to see him for the holiday's!

 Thanks for the 'others', you just don't see that many all at once nowadays. As far as Thanksgiving, my daughters have so many places to go that we usually arrange another day to get together. Hopefully. Not really sure if I will do much of anything, which is a bit of a bummer. I can always rake a tons of leaves for a few hours, that makes the day go by. Who knows. I like to stay busy doing something/anything on the 'emotional' holidays. That or play guitar, drink, and smoke a cigar if I am tanking.

Why don't I bring a bottle of bourbon and the cigars?  You can play the tunes.  That sounds like a mighty fine thanksgiving.

 Normally go my folks place or head down south to my sister's place.   This year a decision has yet to be made...  GF wants me to go to her family's gathering and I don't feel comfortable with that just yet... 

I made Thanksgiving dinner once.  Back when I was married we hosted and I did the bulk of the work.  I NEVER want to do that again!  Kudos to all those who are able to pull it off.

Doing the bulk of the work is a nightmare, for sure. Last year my mom and her bf came to our place, and it was just the five of us...and all five of us (even my 11yo daughter - 10 at the time) had at least one dish. I made the ham, the green bean casserole, and the pumpkin cheesecake. My husband made the pies, mashed potatoes, and stuffing, mom made homemade cranberry "sauce", the turkey and turkey gravy, her bf made fresh homemade dinner and crescent rolls, and my daughter made the candied yams. We had a feast, and we were all proud of it. It was awesome. Best part about it, nobody spent all day in the kitchen - so we were all able to enjoy football and relax too.

 It appears to be Family Tradition for Mom aka Me to do all the cooking. Last year I insisted my oldest daughter and her hubby handle it. Well that was a mistake to those of us that don't happen to like burnt black deep fried Turkey...so it's back to me again this year..Having done a lot of Catering I have many steam tables that I set up the night ahead so they're ready to use. Also the night before I make the stuffing and put it in one of those oven bags and put it in the fridge ready to bake with the Turkey. On the day of while the turkey, stuffing and sweet potatoes are cooking I make all the other side dishes, corn green beans  and a Baltimore thing...sauerkraut ect.ect. and put those in the steam pans. When it's time to cook the potatoes to mash I turn on the sterno to heat up the steam table then make gravy and bake my homemade rolls. By the time family arrives all the food is cooked cept the rolls and mashed potatoes plus all the mess is cleaned up. They eat on Chinet paper plates using heavy duty plastic ware and plastic cups. Then finally I grab a beer and sit and watch the Cowboys game while they all eat and yack...Life is Good.

 being homeless, hard to have plans on where to go for Thanksgiving. Some churches are having meals, and Salvation Army is having their Thanksgiving meal catered by The Cheesecake Factory.

all well and good, but I miss getting out of bed Thanksgiving morning at 5:30 to shower, shave my arms up to my elbows, including the hair on the back of my hand and knuckles, and then make my lasagana (if you remember, I posted how I make my lasagna before--not giving that out again), green bean casserole, corn bread, turkey, stuffing, sweet potatoes, and brown gravy all by scratch, including making my own sauce for the lasagna. I love to cook for others and watch their faces when they enjoy their meal.

 I/We go to my in-laws. My mother in law and sister in law bake the ham and makes some side dishes.
I make either 2 cheesecakes and a broccoli-cheese casserole or a tater tot casserole and couple of cheesecakes.
We will be going there this year as usual....eat and watch the COWBOYS WIN!!! :)

 will work that day.....have friends that are going out of town, (and have small children) so I volunteered to work Thanksgiving, Christmas, but am taking off on New Year's!   Plus I can't cook, do have plenty of friends that cook, so I can only bring myself after work.  But I just pick up a bottle of something to not show up empty-handed!    But no plans as of now.........  Not really feeling the Holiday spirit this year

 As a single heterosexual male, who considers beer and wings as a holiday meal, I will be spending it in the man cave consuming as much alcohol as I can. As for cooking? I may fire up the grill and see what I can come up with other then hotdogs and burgers. No family to go visit, and if I did, I wouldnt go anyways. All my friends got families of their own, so dont need any handouts, or sappy feelings. It would be fake anyways.

Here ya go Jess :) One regular and one glazed easy recipes  Really good and can substitute canned sweet potatoes if you'd like ;)

Sweet Potato Pie

1 unbaked pie shell
1 1/2 cups mashed sweet potatoes
1 tablespoon butter
1/3 cup sugar
3 eggs, well beaten
1 1/2 cups milk
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. mace
1/4 tsp. allspice

Boil sweet potatoes until tender. When cool, peel and mash to make 1 1/2 cups. To the sweet potatoes, add butter, sugar, eggs and remainder of ingredients.Pour into pie shell and bake at 425 for 15 minutes. Then lower oven temperature to 350 and continue baking 30 minutes or until done.




Glazed Sweet Potato Pie

1 cup sugar
2 tsp cornstarch
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
3/4 cup dark corn syrup
1/8 tsp. ground cloves
3 tbsp butter or margarine
1 cup cooked, mashed sweet potatoes
3 eggs, slightly beaten
1/4 cup pecans (optional)
1 unbaked 9 inch pie shell

Mix sugar, cornstarch, salt and spices in a heavy saucepan. Stir in corn syrup, butter and sweet potatoes. Bring to a boil over medium heat for 3 minutes or until slightly thickened. Remove from heat and stir gradually into slightly beaten eggs. Pour into unbaked pie shell. Sprinkle pecans over top. Bake @ 400 for 10 minutes; reduce heat to 350 and cook 35-40 minutes longer.

 My family is having TG on Tuesday because my sister and brother-in-law have to work Thurs...I can't get a few hours off from work and cannot attend...so Thursday I go to my girl's parents and I always bring a bottle of wine.  Have to work Friday and get paid triple time and get a comp day off...ahhhh great times.  Hate the Holidays.

 The girls and I go to Cracker Barrel, then  go see a couple of movies. No cooking, no clean up, and no family drama. I absolutely love our Thanksgiving tradition. heart

 We did that the last Thanksgiving my dad was alive (minus the movies).  And quite frankly, it was my favorite Thanksgiving ever.

 But, we did learn from our mistake. The first year we did it which was 4 years ago, we got home and realized we had no left overs. sad


  So, now, we all get a dinner to go too. smiley

2. I see how you are allowed in, but how do your daughters get in? isn't it federal law that you have to be at least 80 to eat at Cracker Barrel?

You can be any age and enjoy Cracker Barrel

...said the man who went to college in a town where Cracker Barrel was one of the only decent chain sit down restaurants aside from Perkins and Hoss's.

 So it's down to the last minute and of course we had to go get supplies for dinner last night. (As well as an asinine amount of holiday decorations...an entire paycheck I was saving for a Seattle trip...gone. I've been saying since last night, I married Clark Griswold pt.2)

Yes I'm cooking. I blame Pinterest, because I wasn't really planning to. I've opted for a Crock Pot ham (like I said...we don't really do turkey here). My husband will be making the pies - all except one. One of the people coming over is bringing a sweet potato pie. WIN! cheeky

 Here's a few recipes that sound awesome for Holidays (or any day) and generally ingredients are staples we keep. :)  Haven't tried these yet, but know they gotta be wondermous! lol

Sweet Potato Cobbler


Melt: 1 stick margarine in a 9x12 ovenproof dish
Mix:
1 cup self-rising flour
1 cup sugar
1 cup milk
Pour into center of melted margarine. DO NOT STIR
Mix:
2 cups cooked, but firm, peeled and sliced sweet potatoes
1 cup sugar
1/2 cup light brown sugar
1 1/2 cups water
1 teaspoon vanilla
1 teaspoon cinnamon

Pour into center of melted margarine and batter. DO NOT STIR. Bake at 350 for 45 minutes or until light brown.


No-Bake Chocolate Oatmeal Cookies

(I have made these and they're awesome!!! :) )

2 cups sugar
3 tablespoons cocoa
1/2 cup milk
1/2 stick Imperial margarine
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
2 3/4 cups quick oatmeal (uncooked)

Mix sugar, cocoa, milk and margarine. Pour into medium buttered pan. Bring to boil on medium heat, stirring frequently. Boil 1 1/2 minutes.  Remove from heat and stir in peanut butter and vanilla extract until thoroughly mixed. Stir in oatmeal until blended. Drop by teaspoon onto wax paper. Let sit for 30 minutes. Best if kept refrigerated.

 Last minute change of plans, I will no longer be sitting home alone and day drinking till time to go to work. A friend mine was supposed to head to Jacksonville to have dinner at his girlfriends families house. But now they are coming here to Tampa. So I will be having dinner with them and drinking before work.

My side of the family used to all meet at Western Sizzlin' for Thanksgiving buffet.  Family got bigger as nieces got married and have children...someone always b*****ng about this or that... I love my family but the drama is just too much!  We'd leave there, me in tears from being so mad and head to the in-laws where there's no drama, everyone gets along which is how it should be.   I miss TG dinner with my family but there's nothing that will please them all so we gave up.:/

 My wife and sister split the cooking....we cook at our home and bring stuff with us.  My wife will cook a turkey tonight so that we have LOTS of leftovers, because with a big crowd, there is not a lot of turkey left for pot pies, etc.

Friday is the day we travel up to Phillipsburg, NJ for Toby's hot dogs....we'll order like 80 of them and distribute to family members.  Dogs are cooked in oil, and have mustard, onions and dill pickle...for $1.10.  It's been a tradition of ours for the past 10-15 years, though we didn't do it last year because my wife's uncle had brought them down about 2-3 weeks earlier.
